Prawn * Pineapple Curry
Udang Masak Lemak Nenas
- 500 gm Fresh Prawn (Deveined, skin on & marinate with a little salt)
- 75 gm #IbuSegalaRempah
- 200 ml Coconut Milk
- 5 gm Ground Toasted Shrimp Paste (Belacan)
- 5 gm Pounded Candlenut
- ½ nos Pineapple (cut into chunks)
- ½ tsp Tamarind Paste
- Water
- Salt & Sugar to taste
- Kaffir Lime Leaves (optional)
Combine all ingredients except prawn into a pot. Put it to a boil till the pineapple becomes a little tender.
Add in the prawns, Allow it to cook for about 2 minutes. Taste and adjust seasonings.
Udang Lemak Nenas or Prawn & Pineappple in Coconut Cream ready to be served
