Prawn * Pineapple Curry
Udang Masak Lemak Nenas
Ingredients
- 500 gm Fresh Prawn Deveined, skin on & marinate with a little salt
- 75 gm #IbuSegalaRempah
- 200 ml Coconut Milk
- 5 gm Ground Toasted Shrimp Paste (Belacan)
- 5 gm Pounded Candlenut
- ½ nos Pineapple cut into chunks
- ½ tsp Tamarind Paste
- Water
- Salt & Sugar to taste
- Kaffir Lime Leaves optional
Instructions
- Combine all ingredients except prawn into a pot. Put it to a boil till the pineapple becomes a little tender.
- Add in the prawns, Allow it to cook for about 2 minutes. Taste and adjust seasonings.
- Udang Lemak Nenas or Prawn & Pineappple in Coconut Cream ready to be served
